Chicken Tenders – 99% Approved for The Virgin Diet

These were AWESOME! They would be okay in cycle 2 & 3. I did eat these on the 2nd to last day of my cycle 1 for the Super Bowl, so I cheated a tiny bit.

Ingredients:
• 2 large chicken breasts
• Rice Chex (these are the only questionable ingredient, with a little sugar in them)
• Sea Salt & Pepper
• Paprika
• Dried Oregano
• Garlic Powder
• Onion Powder

1. Cut chicken breasts into strips & sprinkle strips with sea salt & pepper

2. Heat oven to 450 degrees & spray pan with 100% olive oil spray

3. Crush (about 2 cups) Rice Chex on a large plate. Add sea salt, paprika, dried oregano, garlic powder & onion powder (I like a lot of seasoning, but add as much or little as you like)

4. Dip chicken strips into the crushed Chex & seasoning mix, coat & put directly onto olive oiled pan

5. Bake for about 17 minutes (180 degrees internal temp is perfect)

I dipped them into Frank’s Hot Sauce & they were so yummy!

SUPERFOODS: Brussel Sprouts

I’ve always been very leery of brussel sprouts. Even the words made me cringe, but not anymore. Not only are brussel sprouts packed with nutrition, they CAN be delicious.

Place brussel sprouts in frying pan with enough water to cover the entire bottom of the pan & then a little bit more. Drizzle with olive oil, sea salt & freshly ground pepper. Heat covered on high for about 8 minutes. Water should begin to disappear as its steaming up the sprouts to a soft texture. Once all the water is gone drizzle with a touch more olive oil & season once more.

Cover & cook for at least 5 minutes, checking & rotating occasionally. They are ready to eat when they are charred & soft. Enjoy these delicious little guys!

(They’re also great for leftovers! Microwave & enjoy again.)
