Southwest Chicken Pasta (Virgin Diet Approved!)

Here is my absolute FAVORITE Virgin Diet recipe that I have created.  It is super quick & easy & both friends & family (non Virgin Diet-ers) love it!Southwest Chicken Pasta



  • 3 Chicken Breasts (preferably Organic)
  • 1 Box Rice Penne Pasta
  • 1 Large Can Original Rotel (Use mild if you prefer less spicy)
  • 2 Small Cans Diced Green Chilies
  • 1 Yellow Onion
  • Chicken Broth (preferably Organic)
  • Extra Virgin Olive Oil
  • Sea Salt
  • Pepper
  • Cumin
  • Chili Powder
  1. Place chicken in large skillet with about 1/4 cup olive oil & 1/2 a cup of chicken broth (enough to cover the bottom of your skillet but not too much to cover your chicken breast).  Season with sea salt & pepper.  Cook, partially covered (with lid about halfway on) over medium/high heat.
  2. Cook ChickenBoil large pot of water.
  3. Chop onion & open cans.Chop Onion & Open Cans
  4. Flip chicken & add onion, chili powder & cumin (as much as you like, I like A LOT!), partially cover & keep cooking.
  5. Water should be boiling now, add pasta to boiling water.
  6. Once the majority of the chicken broth has absorbed add the Rotel & green chilies.  Cover & keep cooking.IMG_3179
  7. Strain pasta (I like to give rice pasta a cold rinse, not really sure why or if it does anything other than stop it from cooking anymore).
  8. Check chicken to make sure it has an internal temp. of 165 degrees before serving.


Serve with your favorite veggie & enjoy!  (This also makes amazing leftovers.)

    I’m trying this diet. It’s really, reall hard but that looks amazing. Well done!! How is the diet treating you?

      Had been going very well, now being pregnant I still eat as healthy as possible but currently not trying to lose weight. Just maintain a healthy lifestyle until after baby, then it will be Virgin Diet full force. 🙂
