Dark Chocolate Chip Protein Cookies

1 Aug

After 3 attempts I think I’ve created my Dark Chocolate Chip Protein Cookie masterpiece!  I’ve swapped out the unhealthy ingredients for healthier NATURAL ones & kept the batch small so you can’t binge on them!  Some of my key swaps were dark chocolate chips for semi-sweet, whole wheat flour for white flour & coconut oil rather than butter.  Now you can still have cookies but they are pretty much guilt free!  I would love your comments on this recipe & let me know how they turned out for you.

Ingredients:

  • 1/2 cup coconut oil (preferably Organic)
  • 1 packet Stevia
  • 1 cap pure vanilla extract (give or take the cap is about 1/4 tsp.)
  • 2 squirts of Agave Nectar (maybe 1 tsp. if you are measuring)
  • 1/2 cup brown sugar
  • 1 1/2 tbsp. egg whites
  • 2 tbsp. skim milk
  • 2 pinches of sea salt
  • 1 pinch of baking soda
  • 2 scoops vanilla protein powder (whatever scoop comes with your protein powder should work, my scoop appears to be a little larger than a tbsp.)
  • 1 cup whole wheat flour
  • All natural dark chocolate chips
Directions:
First preheat your oven to 375 degrees.
  1. Cream together coconut oil, Stevia, vanilla, agave nectar, brown sugar, egg whites & skim milk (I used my kitchenaid mixer & creamed it together on high! So you want it mixed really well.)
  2. Add protein powder, flour, baking soda & sea salt & mix on low
  3. Add dark chocolate chips (I just used my own judgment here & added just enough that looked right)
  4. Form small dough balls (about the size of a ping pong ball) & then flatten the ball with your hand or the bottom of a cup
  5. Bake for about 6-10 minutes depending on your oven, mine takes about 8 minutes, but keep your eye on these little guys you don’t want them to burn
This recipe makes 16 cookies each cookie has about 4-5 grams of protein & are all natural, there is nothing better than a guilt free cookie!  Try experimenting with shape if you like thicker more cake like cookies.  Hope you enjoy these protein packed cookies!

What a great idea!! I’d just suggest spelt flour instead of whole wheat. Even though whole wheat is supposed to be better than white, it really isn’t much better at all because it’s the way your body processes it.. And whether white or whole wheat, both turn to sugar when they react with your saliva and that’s the problem.

Awww, looks amazing! Love cookies SO. MUCH.

So since I’m really new to TIU, when could you eat this cookie? After lunch???

Fun to see you have a site here! So cool…

Technically before 3 but they allow a couple splurges, so as long as you aren’t eating 20 of them anytime is ok. There’s nothing in them that make them really bad! (ok, maybe the brown sugar, but that’s the splurge!) 🙂
