Guilt Free Nachos

12 May

I am in love with these nachos & they are truly guilt free.  They are a perfect snack & people who aren’t watching what they eat will love them too!  The idea for this recipe comes from but I’ve changed it slightly to make it even more guilt free.

  • Organic, real corn tortilla chips, I used yellow & blue tortilla chips & look for chips with as few ingredients as possible (corn, oil, salt) or try using my Homemade Whole Wheat Tortilla Chips
  • Veggies, I used cherry tomatoes & white onion
  • Top with plain Greek yogurt, the original recipe calls for fat free sour cream, but Greek yogurt tastes nearly identical & contains more nutritional value, if you choose to use sour cream my favorite brand is Daisy (opt for the Light Sour Cream)
  • Cheese, this is where most of the calories are so don’t pile on the cheese, use 1/4 cup per serving (or 12 chips) & use a light cheese
  • Black Refined Beans, look for organic & added jalapeños or peppers is okay, I prefer it
  • Taco Seasoning, I’m addicted to Trader Joe’s taco seasoning, otherwise look for a low sodium taco seasoning
  1. Heat oven to 350 degrees.
  2. In a small pot heat black refined beans & taco seasoning together over medium heat.
  3. Cover baking sheet with tin foil to make the cleaning process easier & lay out chips.  Add beans, onions (or other veggies you want to cook) & cheese.
  4. Cook for 8-10 minutes or until cheese is melted & bubbly.  While nachos are cooking chop up your tomatoes.
  5. When nachos are done top with tomatoes & Greek yogurt.
These are so delicious, easy & when using healthier substitutes, GUILT FREE!
