The World’s Easiest Shredded Chicken

This is one of my staple ingredients in a majority of my recipes. It is my absolute favorite way to cook chicken! You can use this for ANYTHING (pizzas, sandwiches, tacos, salads, wraps, casseroles, nothing is off limits). Its not fast, but it is easy & you can cook up a lot to use throughout the week.


  • Extra lean chicken breasts, as many as you want, 2 big chicken breasts last a long time for me
  • Low sodium chicken broth, I prefer Swanson’s but any will do
  • Favorite spices, depending on what you are going to use the chicken for you can season it accordingly, but I typically would use Mrs. Dash Chicken Grilling Blends
  1. Place chicken in crockpot
  2. Pour enough chicken broth in pot that it just covers the chicken breasts
  3. Cook on high for 2-3 hours or low for 5-6, you’ll know the chicken is done when it easily pulls apart when shredding it
  4. Take two forks & shred chicken breasts
  5. Add spices & mix with the chicken, if you’re going to keep cooking it add a little more to keep it juicy, otherwise store in the fridge for up to a week (trust me it won’t last that long!)
Use this chicken in my Chicken Enchilada’s recipe or Chicken & Black Bean Soup.
