5 Minute Spaghetti Sauce

I wish I could claim this amazing recipe as my own but I cannot.  I got this recipe from 101cookbooks.com.  I’ve made my own but after trying this one it is just too good & simple.  It is a little spicy but for me it is PERFECT!

Five Minute Tomato Sauce

  • 1/4 cup extra virgin olive oil
  • 1 1/2 teaspoons crushed red pepper flakes, if you don’t like a little spice use only 1/2 teaspoon
  • 1/2 teaspoon sea salt
  • 3 medium cloves of garlic, finely chopped, fresh or jarred
  • 1 28-ounce can crushed red tomatoes, use organic if possible, but avoid diced, pureed, & whole tomatoes.  Also, pass on crushed tomatoes that have added spices & seasonings with ONE exception, basil.
  • Zest of one lemon
  1. Combine the olive oil, red pepper flakes, sea salt, and garlic in a cold saucepan.
  2. Stir while you heat the saucepan over medium-high heat, saute just 45 seconds or so until everything is fragrant – you don’t want the garlic to brown.
  3. Stir in the tomatoes and heat to a gentle simmer, this takes just a couple minutes.
  4. Remove from heat and carefully take a taste (you don’t want to burn your tongue) -If the sauce needs more salt add it now.
  5. Stir in the lemon zest reserving a bit to sprinkle on top of your pasta.

Makes about a quart of tomato sauce.  Leftover sauce lasts for 3-4 days in the fridge & I swear it is better the day after.
