Stir-Fry Chicken with Garlic Sauce

Here is one of the most delicious & simple recipes I’ve come across in a long time.  It is for a Stir-Fry Chicken with Garlic Sauce, it’s also a great way to get rid of your veggies before they go bad!

Serve this over rice (or try my faux rice!), with tortillas or enjoy alone.

A tip to make this even faster is to prep the chicken & veggies the night before.  The first time I made this I cut up twice as much chicken & veggies to have it ready in the fridge for another meal.

Stir-Fry Chicken with Garlic Sauce

Ingredients:

  • 2 large garlic cloves, minced, I used the jarred minced garlic instead of fresh
  • 1/4 cup soy sauce – La Choy is my favorite!
  • 1/4 cup water
  • 1/4 cup honey
  • 1 tablespoons vegetable oil, I’m sure you could use olive oil instead
  • 1 tablespoon cornstarch
  • 1/4 teaspoon pepper 
  • 1/4 teaspoon crushed red pepper flakes, I add more because I like it spicier
  • 1 pound boneless skinless chicken breast, cut into quarter size chunks
  • Any vegetables of your choice – I used, broccoli, red onion, green onion, red pepper & green pepper
  1. Combine the first 8 ingredients in a medium sized bowl and stir well
  2. Add chicken chunks to marinade and mix to coat – I actually put the chicken in first & then each ingredient separate, probably doesn’t matter
  3. Cover and refrigerate 2 hours – I have made this twice, once letting it sit for 2 hours, once not letting it sit at all, both times it was great!
  4. While meat is bathing in saucy mixture, chop vegetable into large slices
  5. Heat 1 tablespoon vegetable or olive oil in skillet
  6. Using a slotted spoon, transfer chicken to the hot pan
  7. Stir-fry about 5 minutes, then add vegetables and remaining sauce
  8. Continue stirring all ingredients for another 5-10 minutes, depending on desired crispness of veggies
